Gluten Free Banana Cake

I like to approach most nutritional (and life) conundrums from a whole hearted ‘You CAN have your cake and eat it’ perspective.  There is nothing fun or healthy about restriction and life without cake would quite possibly be an all time unthinkable disaster for me.  I am not the worlds best baker but I do give it a good go and I like to rock up to most parties (picnics, lunches & birthdays mainly) with some sort of caked based offering.   This  simple Banana Cake recipe is an all round goody and seems to lend itself well to most occasions.  For a grain free option substitute the Oat flour for Ground Almonds.

  1. Mash the bananas in a mixing bowl with a fork. Add eggs and cinnamon and mix well with wooden spoon. Add Honey & Oat Flour. Pour into loaf tin. Bake in a preheated 180 degree oven for 35 mins. After 35 mins, take out cake and check the centre of the cake with a skewer. If the skewer comes out cake mix free then allow the cake to cool for 10 mins before removing from tin and cooling further on a cooling rack. If needed, bake for a further 10 minutes and remove from oven to cool.
