Fiery Butternut Squash Soup

Embarking on a mission to change your lifestyle and your families come with a set of challenges.  I’m not talking hardship or suffering here….I’m talking about challenges that aren’t really ‘real life’ challenges, just merely little tricky phases that we encounter, when we are nothing more than bloody exhausted.  It’s first world problems for sure, but never the less, trying to stay focused and positive about eating well – when you’re tired, skint and your children are driving you crazy….is still indeed a challenge.

My first journey into eating well literally stopped with me.  The rest of the family could eat what the hell they wanted but I was eating like a plant based queen and no one was stopping me!  Oh… and while I feel all fabulous,  I may even take a picture of my gorgeous vegan meal and share it with the world!  You enjoy your gluten laden processed pie kids…but mummy is all good!

I think because I embarked on this path for chronic health reasons and not to lose weight, my perspective on what I was eating was very much an inside job.  I needed to know a whole host of info about my food – what was in it, what good it would do, what damage it would do and a big gang of other questions that would get me analysing my diet and licking the buckwheat crackers like i’d never seen food before.  Once i’d revelled in the glory of not only losing 2 stone but also feeling bloody amazing, I began to not only question what I was putting in my mouth, but what the hell was everyone else putting in theirs?!  In many ways, once you go there, once you really start to know how much utter crapola is in our food, you kind of wish you didn’t get started.  Because as soon as you have the intelligence, that that healthy piece of fruit your kid is about to eat is in fact laden with cancer causing pesticides and hormone disruptor mofo’s…….you can’t ignore it…you just can’t.  You can turn a blind eye, you can even let it happen (I do FYI) but at some point we need to tackle a method of damage limitation.  So, you’re now not only questioning your diet, you are questioning your families….and now you feel you have more work to do!  Well, actually…not true.  Because in essence by being healthy and your kids being healthy, you will spend less time at the doctors, they won’t have to take time of school and your daycare won’t ring you each week because your child has picked up a bug…AGAIN! So less work, less stress and more energy….BOOM!   And on the days you do put extra effort into your family meals, leave yourself high and dry, eyeing up the shitty fish fingers – that are encrusted to the roof of the freezer like a cheap date in a bad pub with a sticky carpet…….let me tell you…….you will always have time for soup!

Instructions
  1. Peel and chop the main ingredients and add to a large sauce pan. Add coconut oil and heat the pan gently. Add herbs and place lid on sauce pan. Cook on a low heat and allow the vegetables to 'sweat' for 15 mins. Then add stock, cook for a further 20 mins. Blend ingredients in a high powered blender and season to taste. You can make the soup thinner in consistency by adding more stock. Serve with some fresh Coriander and Black Pepper or here i added some fresh Rosemary. This soup is great for freezing too.
